Now,scientists have found that there are more than two hundred chemical ingredients in tealeaves and almost 40% of them can be dissolved by water from their long time researching. When we drink tea, we actually take in the water extracts of tealeaves and then they are absorbed by our body. Then it functions in many ways. For one thing, it can sterilize and detoxify water, oral cavity and intestines and make water hygiene enough for drinking. For another thing, it contains a vast of nutrients and medicative components. Thus, it can have physiological and medical effect on human body. Therefore, tea can be helpful to improve people's health condition. For example, ingredients like various vitamins, trace elements, amino acid can add nutrition, facilitate metabolism, delay senility and so on. Fluorin can guard against and cure decayed tooth, selenium can prevent cancer, and amylose ester can repel radiation.



Besides boiling water , there are two types of chemical ingredients in tealeaves, those soluble into water and those insoluble into water. As a drink, tea avails itself of the soluble one, namely, the water extracts, which accounts for about 35%-45% of dry tealeaves. During the course of processing, some water-soluble contents will become insoluble. For instance, constringent diphenols, after being oxidated, condensation and combination with protein, becomes water-insoluble. On the opposite way, some water-insoluble amylum and proteins may turn into soluble grain and amino acid. This process changes the fragrance of tea from crude and astringent into fresh and mellow.



According to their effect on human body, the compounds can be divided into two groups: nutrients and medicative ingredients. They are amino acid, vitamins, mineral compounds, proteins, and so on.



Protein is the basis of human cell while amino acid is a basic constituent element of protein. There are about twenty kinds of amino acid in total, eight of which cannot be automaticly composed by human body and can only be supplied by eating food and drinking tea. The proportion of amino acid in tealeaves is about 2% to 5%. They are in 25 types of amino acid in tealeaves, with theanine being the most in amount, followed by threonine, lysine, methionine and so on. These amino acids play vital physiological roles in human body. Theanine has the effect of cardiac, blood vessel dilatation, bronchus and smooth muscle laxation.



As tea researcher's analysis, high-grade tealeaves usually contain more amino acid than low-grade tealeaves. And the magnitude of amino acid in different kinds of tealeaves rank as follows: green tea, black tea, white tea, Oolong tea. While for glutamic acid, the rank is green tea, Oolong tea, and black tea. For theanine, the rank is white tea, green tea and black tea. Green tea ranks first in arginine, followed by black tea.



Vitamin is a necessary substance for human body to maintain normal metabolism. Human tissues cannot compose vitamin on their own. Only from eating and drinking can it be obtained. Frankly speaking,the lack of one or some kinds of vitamin will cause disease. But we should not worry about it, there is a good news that tealeaves contain large content of vitamin of various kinds and Vitamin C ranks first in the amount. So we can drink tea to supply our body's needing vitamin.

According to the reports of magazine “International Cancer Research?in May, researchers in University of California Los Angeles Branch Cancer Research Center finds for people who drink green tea for longer time, the ratio suffering from chronic gastritis and gastric carcinoma is lower. Researchers made analysis and research on over 2200 respondents selected according to their age, sex, whether smoke or not, drinking quantity and other factors, the result showed that the suffering from gastric carcinoma ratio of persons who like drinking green tea is 48% lower than that of persons who do not like drinking tea.

The scientists first discover green tea owns effect of preventing chronic gastric disease, which is significant for reducing morbidity of gastric carcinoma and providing gastric carcinoma sufferers with dietotherapy for the future. China Shanghai Medical University , American University of Columbia and University of Massachusetts Cancer Research Center also participated in the research.
